  • 3 pounds yellow or red potatoes (peeled and quartered)
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 1/2 head of cabbage (about 6 cups chopped)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the quartered potatoes in salted boiling water for 12-15 minutes until fork-tender.
  2. In a large non-stick pan, sauté diced onions and garlic until soft.
  3. Add chopped cabbage, oregano, Italian herbs, and lemon juice; cook until tender.
  4. Drain the potatoes and mash them with heavy cream and butter; season well.
  5. Fold in the cabbage mixture and half of the crispy bacon (optional).
  6. Serve hot, garnished with melted butter and green onions.
