  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, warm olive oil and sauté diced onion and bell pepper until soft (3–4 minutes).
  3. Add chopped spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper; set aside to cool slightly.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese. Stir in Italian seasoning along with salt and pepper.
  5. Fold in the shredded cheese and the cooled vegetable mixture until combined.
  6. Grease a 9-inch pie dish and pour in the quiche mixture evenly.
  7. Bake for 40–45 minutes or until golden on top and set in the center.
  8. Allow to cool for 5–10 minutes before slicing.
