  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Rinse and drain black beans and black-eyed peas; drain sweet corn.
  2. In a large bowl, mix beans, corn, cilantro, diced red and orange bell peppers, and red onion.
  3. In another bowl, whisk together chili powder, kosher salt, sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and gently stir to coat.
  5. Refrigerate for at least 30 minutes before serving to meld flavors.
