  • 1 cup + 1 TBSP sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/4 cup fresh whole cranberries
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3.4 oz box instant pistachio pudding mix
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Add eggs one at a time along with vanilla, mixing well.
  4. Roughly chop cranberries in a food processor with a tablespoon of sugar.
  5. In another bowl, whisk dry ingredients including flour, baking powder, salt, and pistachio pudding mix.
  6. Gradually incorporate the dry mixture into the wet mixture until combined; then add milk.
  7. Fold in chopped pistachios gently.
  8. Transfer batter to the prepared loaf pan and bake for 55 to 65 minutes.
  9. Cool for five minutes before transferring to a cooling rack to slice.
