  • 4 medium over-ripe bananas (mashed)
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 4 oz cream cheese (softened)
  • 2 tablespoons granulated sugar (for cream cheese swirl)
  • 1 egg yolk (for cream cheese swirl)
  • 1 teaspoon vanilla extract (for cream cheese swirl)
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F and line a muffin pan with liners.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, mix mashed bananas with granulated and brown sugars until well blended. Add egg, vegetable oil, and vanilla; mix thoroughly.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Gently stir in chopped pecans.
  5. In another bowl, beat softened cream cheese until smooth. Add sugar, egg yolk, and vanilla; mix well. If too thick, add a splash of milk.
  6. Fill muffin tins about three-quarters full with batter. Top each with cream cheese mixture and gently swirl with a toothpick.
  7. Bake for 16–18 minutes or until a toothpick inserted comes out clean.
  8. Allow muffins to cool slightly before serving.
