  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook tortellini according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Add sliced beef sirloin and cook until browned (about 5 minutes). Remove from skillet.
  3. In the same skillet, sauté green bell pepper, onion, and garlic until softened (5-7 minutes).
  4. In a saucepan, melt butter; whisk in flour for 1 minute. Gradually add milk while whisking until thickened (3-4 minutes).
  5. Stir in provolone and Parmesan until melted; season with salt and pepper.
