2 cups cooked shredded chicken
1 cup shredded mozzarella cheese
1/2 cup softened cream cheese
4 large flour tortillas
1 cup fresh spinach leaves
2 cloves minced garlic
Olive oil for cooking
1/4 cup sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup diced tomatoes
1/4 cup chopped fresh parsley (optional)
Instructions
In a large bowl, mix together the shredded chicken, mozzarella, cream cheese, minced garlic, sour cream, garlic powder, onion powder, salt, and black pepper until well combined.
Lay out the tortillas and evenly distribute the chicken mixture in the center of each.
Top with fresh spinach leaves and diced tomatoes; sprinkle with parsley if desired.
Fold in the sides of each tortilla and roll tightly from the bottom up.
Heat olive oil in a skillet over medium heat. Cook wraps seam-side down for about 3-4 minutes until golden brown; flip and cook for another 3-4 minutes.
Remove from skillet and let cool slightly before slicing in half to serve warm.
