  • 1/4 cup flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 9oz baby button mushrooms (sliced)
  • 3/4 cup heavy cream
  • 3/4 cup chicken stock
  • 2 large cloves garlic (minced)
  • Fresh parsley and chives (for garnish)
  • Lemon juice (to taste)

Instructions

  1. Slice each chicken breast horizontally to create four pieces.
  2. In a shallow dish, combine flour, garlic powder, salt, and pepper. Dredge the chicken in the mixture.
  3. Heat olive oil and butter in a pan over medium-high heat. Cook chicken until golden brown on both sides, about 4-5 minutes per side.
  4. Remove chicken and sauté sliced mushrooms in the same pan until golden. Add minced garlic and cook for another minute.
  5. Pour in chicken stock and heavy cream; stir well. Simmer for about five minutes to thicken.
  6. Stir in herbs and lemon juice, season to taste, then return chicken to the pan to coat with sauce before serving.
