  • 1 lb large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 4 large potatoes, peeled & chunked
  • 4 tbsp butter
  • Salt & pepper to taste

Instructions

  1. Boil chunked potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, heavy cream, and milk until smooth. Season with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat and cook shrimp for 2–3 minutes per side until pink. Remove shrimp and set aside.
  3. In the same skillet, melt remaining butter and sauté minced garlic for about 1 minute.
  4. Pour in heavy cream and chicken broth; simmer for 3–4 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted, then add cooked shrimp back into the sauce to coat.
  6. Serve creamy garlic shrimp over mashed potatoes, garnished with fresh parsley.
