  • 8 oz chickpea rotini pasta
  • 1/2 red bell pepper, diced
  • 1/2 English cucumber, diced
  • 1.5 cups broccoli florets, finely chopped
  • 1 cup cherry tomatoes, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1.5 oz crumbled fat-free feta cheese (or tofu for dairy-free)
  • 2.25 oz sliced black olives, drained
  • 1/4 cup extra virgin olive oil
  • 4 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 garlic clove, finely minced
  • Salt and pepper to your preference

Instructions

  1. Cook the chickpea rotini according to package instructions until al dente; drain and set aside to cool.
  2. Wash and chop all vegetables into bite-sized pieces.
  3. In a bowl, whisk together olive oil, apple cider vinegar, dijon mustard, minced garlic, salt, and pepper to create the dressing.
