  • 4 bone-in skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1 teaspoon lemon pepper
  • 3 tablespoons salted butter
  • 3 cloves minced garlic
  • ½ cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ¼ cup fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • 5 ounces baby spinach

Instructions

  1. Preheat your oven to 400°F.
  2. Season chicken thighs with salt and lemon pepper.
  3. In a large oven-safe skillet over medium-high heat, melt 2 tablespoons of butter and sear the chicken skin-side down until golden (about 3-4 minutes). Flip and brown the other side before removing from the skillet.
  4. Add remaining butter to the skillet; sauté garlic until fragrant. Stir in chicken broth, heavy cream, parmesan cheese, lemon juice, and thyme; bring to a boil then simmer for about 5 minutes.
  5. Stir in spinach until just wilted. Return chicken to skillet and bake for approximately 25 minutes or until internal temperature reaches between 165°F to 175°F.
