  • 1 large sweet potato (peeled and cubed)
  • 5 cloves garlic (minced)
  • 8 oz three-cheese tortellini
  • 4 oz fresh spinach
  • ½ cup heavy cream
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water

Instructions

  1. Heat olive oil in a large pot over medium heat. Add crumbled chicken sausage and cook until browned.
  2. Stir in cubed sweet potatoes, garlic, red pepper flakes, and tomato paste; cook for 2 minutes.
  3. Pour in 6 cups of water and bring to a boil. Reduce heat to simmer, cover, and cook for about 15 minutes until sweet potatoes are tender.
  4. Add tortellini and cook for an additional 10 minutes according to package instructions.
  5. Stir in fresh spinach until wilted. Remove from heat and mix in heavy cream. Season with salt to taste.
