  • 1 pound ground turkey or chicken sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot of well-salted boiling water, cook the penne pasta until al dente. Reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat and brown the ground turkey or chicken sausage.
  3. Lower the heat, then add minced garlic and sauté until fragrant. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. Add heavy cream and let simmer. Mix in Parmesan cheese until melted and thickened. Fold in spinach until wilted.
  5. Combine cooked penne with the sauce, adding reserved pasta water if needed for consistency.
  6. Serve hot, garnished with fresh basil leaves and extra Parmesan.
