  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes
  • 1 tsp Dijon mustard
  • ¼ tsp black pepper
  • Pinch sea salt
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth. Reserve some for serving.
  2. Season chicken cutlets with salt and pepper. Set up a breading station with flour mixed with paprika, beaten eggs, and a mixture of panko crumbs, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and Parmesan cheese.
  3. Dredge each cutlet in flour, dip in egg mixture, then coat with breadcrumb mix. Heat oil in a pan over medium heat and fry until golden brown on both sides (about 4-5 minutes each). Drain excess oil on a wire rack.
  4. Slice baguettes open and spread reserved dressing inside. Add crispy chicken cutlets topped with Caesar salad mixture.
