  • 1 ½ cups Canned or Frozen Corn
  • 1 cup Shredded Cheddar Cheese
  • ½ cup Shredded Mozzarella Cheese
  • ½ cup All-Purpose Flour (or gluten-free blend)
  • 1 Large Egg (or flaxseed meal as a substitute)
  • ¼ cup Breadcrumbs (panko recommended)
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Paprika
  • ¼ teaspoon Salt
  • ⅛ teaspoon Black Pepper
  • Vegetable Oil or Canola Oil for frying

Instructions

  1. Prepare corn by draining canned corn or thawing frozen corn and patting it dry.
  2. In a mixing bowl, whisk the egg until lightly beaten.
  3. Add flour, cheddar cheese, mozzarella cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper to the bowl; mix well.
  4. Gently fold in the corn until evenly combined.
  5. Shape the mixture into small balls or discs.
  6. For frying: Heat oil in a pan and fry bites until golden brown (about 2-3 minutes per side). For baking: Preheat oven to 400°F (200°C) and bake for 15-20 minutes until crispy.
  7. Drain excess oil on paper towels if frying.
  8. Allow to cool slightly before serving with your favorite dipping sauces.
