Crispy Smashed Carrots are the ultimate vegetable side dish that combines simplicity with delightful flavor. These golden, caramelized carrots are boiled until tender and then smashed for extra crispiness before being roasted to perfection.

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the carrot rounds in salted water for 10–12 minutes until fork-tender.
  3. Drain and cool slightly before smashing each round gently on a baking sheet.
  4. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, pepper, and grated Parmesan.
  5. Roast for 20–25 minutes, flipping halfway through until crispy and golden brown.
  6. Garnish with chopped parsley before serving.
