  • 1.5 pounds boneless, skinless chicken breasts
  • 4 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 10.5-ounce can cream of chicken soup (low sodium recommended)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (low sodium recommended)
  • 1 packet Italian dressing mix
  • 16 ounces angel hair pasta

Instructions

  1. Heat vegetable oil in a cast iron skillet over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown.
  2. In a bowl, whisk together cream cheese, butter, cream of chicken soup, garlic, chicken broth, and Italian dressing mix until smooth.
  3. Spray the crock pot with cooking spray. Place the seared chicken at the bottom and pour the creamy sauce over it. Cover and cook on low for 3-4 hours.
  4. About 15 minutes before serving, cook the angel hair pasta according to package instructions until al dente; drain.
  5. Serve the tender chicken over pasta and garnish with fresh parsley or grated cheese if desired.
