  • 2 to 3 boneless, skinless chicken breasts
  • 1 can diced tomatoes with green chiles (10 oz), undrained
  • 1 can whole kernel corn (15 oz), drained
  • 1 can black beans (15 oz), rinsed and drained
  • 1 packet ranch seasoning mix (1 oz)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 block cream cheese (8 oz)
  • 1 cup chicken broth

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add diced tomatoes, corn, black beans, ranch seasoning, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Pour in chicken broth over the mixture and place cream cheese on top.
  4. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until chicken is tender.
  5. Shred the chicken directly in the pot using two forks and stir until cream cheese is fully melted.
  6. Serve hot with your choice of toppings like shredded cheese or fresh cilantro.
