  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 2 cups cooked white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1 tablespoon fresh lime juice (for garnish)
  • 1/4 teaspoon ground cumin (for garnish)

Instructions

  1. Heat a large skillet over medium heat. Season both sides of the chicken breasts with cumin, paprika, cinnamon, chili powder, salt, garlic powder, onion powder, black pepper.
  2. Add olive oil to the skillet and cook the chicken for about 6–7 minutes on each side until cooked through (165°F internal temperature). Remove from heat and let rest before slicing.
  3. In a mixing bowl, combine cooked rice with black beans, corn kernels, red bell pepper, and red onion. Toss until well mixed.
  4. Add sliced chicken to the rice mixture and drizzle with lime juice; toss again.
  5. Serve in bowls garnished with chopped cilantro and avocado slices.
