  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs with brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in grated carrots.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  6. While cooling, beat cream cheese with softened butter until smooth; gradually add powdered sugar and vanilla to make frosting.
  7. Once cooled, frost the bars evenly, cut into squares, and serve.
