  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes (if using).
  3. Place seasoned chicken in the crockpot and pour the sauce over it.
  4. Add chopped sun-dried tomatoes on top.
  5. Cover and cook on LOW for 4 hours or HIGH for 2 hours until chicken is tender.
  6. About 30 minutes before serving, stir in butter until melted.
