  • 4 cloves garlic
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • 1 pound spaghetti
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Cook spaghetti in salted water until al dente; drain and set aside.
  2. Season the chicken pieces with Cajun seasoning and smoked paprika.
  3. In a large skillet, heat olive oil over medium-high heat and sauté chicken until browned; remove from skillet.
  4. In the same skillet, melt butter, add minced garlic, and cook until fragrant.
  5. Whisk in flour for about 1–2 minutes to form a roux.
  6. Gradually add whole milk and chicken broth; bring to a gentle simmer.
  7. Stir in cream cheese and one cup of mozzarella until melted; add Parmesan cheese, salt, pepper, and optional red pepper flakes.
  8. Return cooked chicken to the sauce; simmer for an additional 2–3 minutes.
  9. Toss drained spaghetti with the sauce until well coated.
  10. Top with remaining mozzarella; cover briefly to melt before serving.
