  • 8 oz rotini pasta
  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Grill fresh corn until lightly charred, then remove kernels from the cob. For frozen corn, thaw and drain well.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn, feta cheese, cilantro, and green onion to the bowl. Toss gently to combine.
  5. Taste and adjust seasoning if needed. Cover and chill in the refrigerator for at least 30 minutes.
  6. Before serving, garnish with extra feta cheese, cilantro, and chili powder.
