  • 4 medium bell peppers (any color)
  • 1 lb ground turkey or lean beef
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds.
  3. Sauté chopped onion and minced garlic in a skillet over medium heat until fragrant. Add ground turkey (or beef) and cook until browned; drain excess fat.
  4. In a bowl, mix the cooked meat with rice, drained diced tomatoes, salt, pepper, and any desired seasonings.
  5. Stuff each pepper generously with the filling and place them upright in a baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
