  • 12 street taco size flour tortillas
  • 1 handful fresh spinach, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 splash whole milk
  • 6 large eggs
  • 4 slices cooked turkey bacon, chopped
  • Salt and freshly ground black pepper, to taste
  • Hot sauce for serving

Instructions

  1. Warm the tortillas in the microwave for about 40 seconds to make them pliable.
  2. Press each tortilla into a muffin pan to shape them into small cups.
  3. Evenly distribute the chopped spinach into each cup.
  4. Sprinkle shredded cheddar cheese over the spinach in each cup.
  5. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture into each tortilla cup until halfway full.
  7. Top with chopped turkey bacon evenly across all cups.
  8. Bake at 375°F (190°C) for about 20 minutes or until the eggs are set.
  9. Allow to cool slightly before serving; optionally add hot sauce.
