  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives

Instructions

  1. Preheat your oven to 375°F. In a large pan over medium-high heat, melt butter with olive oil. Season the sirloin cubes and sear until browned on all sides (about 6-8 minutes).
  2. Add the chopped onions and carrots; sauté for 4-5 minutes until softened.
  3. Sprinkle flour over the meat and veggies; stir to coat. Pour in apple cider and beef broth, bring to a boil, then transfer to an oven-safe pot. Cover and bake for about 1 to 1½ hours.
  4. Meanwhile, boil peeled potatoes in salted water until tender. Drain and mash with milk, sour cream, cheddar cheese, and chives until creamy.
  5. Serve generous portions of mashed potatoes topped with the hearty stew.
