  • 1 lb ground beef
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • 12 oz linguine
  • ¾ cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil (for searing)
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, combine ground beef, egg, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper until just mixed. Form into 20-24 meatballs.
  2. Heat olive oil in a skillet over medium heat; sear meatballs until browned on all sides (about 6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter with garlic and red pepper flakes (if using) on low heat. Stir in lemon juice and parsley before adding meatballs back in; simmer for 5–7 minutes.
  4. Cook linguine as per package instructions; reserve pasta water before draining. In another pan, melt butter and stir in heavy cream and Parmesan until combined. Adjust consistency with reserved pasta water if needed.
  5. Serve meatballs over linguine with extra sauce and garnishes as desired.
