  • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter, melted
  • 3 large cloves Garlic, finely grated
  • 1 tbsp Fresh Rosemary, finely diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan cheese

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes and slice them into uniform rounds (3mm thick).
  3. Brush muffin tray cups with melted butter. In a bowl, mix remaining melted butter with garlic, rosemary, salt, and pepper.
  4. Toss potato slices in the mixture until well-coated.
  5. Layer potato slices in muffin cups, stacking them high.
  6. Cover with foil and bake for about 35 minutes; then uncover and bake at 200C/400F for an additional 15 minutes until golden.
  7. Carefully scoop out stacks and drizzle any remaining butter over them before serving.
