  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup milk
  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt, pepper, and half the garlic.
  3. Heat olive oil in a skillet over medium-high heat; sear chicken for 4-5 minutes per side until golden.
  4. Add remaining garlic and herbs to the skillet; pour in chicken broth and transfer to oven.
  5. Roast for 15-20 minutes until fully cooked.
  6. Boil potatoes in salted water until tender; drain and mash with butter and milk.
  7. Toss carrots with olive oil, honey, salt, and pepper; roast alongside chicken for about 20-25 minutes.
  8. Stir heavy cream into skillet drippings for sauce; serve chicken over mash with carrots on the side.
