  • 1 large bulb of garlic
  • Olive oil (as needed)
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Roast the garlic: Slice the top off the bulb, drizzle with olive oil, wrap in foil, and roast at 180C (356F) until caramelized.
  2. Cook the potatoes: Peel and dice the baking potatoes, boil in salted water until fork-tender.
  3. Mash: Drain the potatoes, return to pot, add melted butter, cream, roasted garlic pulp, and Parmesan; mash until smooth. Season with salt and pepper.
  4. Pipe: Spoon mixture into a piping bag fitted with a star tip and pipe onto a parchment-lined tray in swirls.
  5. Bake: Drizzle with melted butter and bake at 200C (400F) until golden brown.
  6. Serve: Garnish with parsley and additional Parmesan before serving.
