  • 1 medium yellow bell pepper, chopped

  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the broccoli, cauliflower, carrots, and bell peppers into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables with olive oil, minced garlic, salt, pepper, oregano, and thyme. Toss until well coated.
