  • 1/2 cup whole milk
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1/4 lemon
  • 1/2 cup heavy cream
  • 2 tablespoons honey
  • 1/2 cup sliced almonds
  • 2 tablespoons unsalted butter (for almond topping)
  • 1/2 cup powdered sugar

Instructions

  1. Prepare the dough by combining flour and salt in a bowl. In another bowl, dissolve yeast in warm water until foamy.
  2. Heat milk, sugar, and butter until melted; combine with flour mixture along with activated yeast, eggs, vanilla extract, and lemon zest. Mix until smooth.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Let the dough rise in a greased bowl covered with a damp towel for about an hour or until doubled in size.
  5. Make the almond topping by melting butter in a saucepan and stirring in honey, heavy cream, and sliced almonds until slightly toasted.
  6. Punch down risen dough and spread evenly in a greased baking pan. Pour on almond topping evenly.
  7. Preheat oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
  8. Cool for about 10 minutes; whip heavy cream with powdered sugar to soft peaks.
  9. Cut cooled cake horizontally into two layers; spread whipped cream filling on one layer before placing the top back on gently.
  10. Refrigerate for at least an hour before serving.
