  • 1 sweet onion, diced
  • 6 garlic cloves, minced
  • 3 to 4 tablespoons minced fresh ginger
  • kosher salt and pepper
  • 1 ½ cups cooked, shredded chicken
  • 4 cups chicken stock
  • 1 teaspoon freshly grated lime zest
  • lime wedges, for serving
  • cilantro, for garnish
  • 2 cups jasmine rice
  • 3 cups water or chicken stock
  • 1 tablespoon unsalted butter
  • 2 limes, zest freshly grated
  • 3 tablespoons fresh lime juice
  • ¾ cup chopped cilantro

Instructions

  1. In a large stock pot, heat olive oil over medium-low heat. Sauté diced onions, minced garlic, and fresh ginger with salt and pepper until softened.
  2. Add shredded chicken, chicken stock, and lime zest. Bring to a boil, then reduce heat to simmer for 20-30 minutes.
  3. Meanwhile, prepare cilantro lime rice by cooking jasmine rice in water or chicken stock with butter, salt, and pepper. Stir in lime zest, lime juice, and chopped cilantro after cooking.
  4. Serve by scooping cilantro lime rice into bowls and ladling the warm soup over it. Garnish with fresh cilantro and lime wedges if desired.
