  • 4 large eggs
  • 1 2/3 cups sugar
  • 1 cup avocado oil
  • 15 oz canned pumpkin
  • 2 cups gluten-free flour blend
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 8 oz cream cheese (softened)
  • 1/2 cup butter (softened)
  • 1 tsp vanilla
  • 2 cups powdered sugar
  • 1/2 tsp Kosher salt

Instructions

  1. Preheat your oven to 350°F. Grease two 9×13" baking pans.
  2. In a bowl, mix gluten-free flour blend, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together eggs, sugar, oil, and pumpkin until combined.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until toothpick comes out clean.
  6. Let cool completely before frosting with the cream cheese mixture made by beating cream cheese, butter, vanilla, and powdered sugar.
