- 1 cup avocado oil
- 15 oz canned pumpkin
- 2 cups gluten-free flour blend
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 8 oz cream cheese (softened)
- 1/2 cup butter (softened)
- 1 tsp vanilla
- 2 cups powdered sugar
- 1/2 tsp Kosher salt
- Preheat your oven to 350°F. Grease two 9×13" baking pans.
- In a bowl, mix gluten-free flour blend, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together eggs, sugar, oil, and pumpkin until combined.
- Combine wet and dry ingredients until just mixed.
- Pour batter into prepared pans and bake for 25-30 minutes or until toothpick comes out clean.
- Let cool completely before frosting with the cream cheese mixture made by beating cream cheese, butter, vanilla, and powdered sugar.
