  • 240ml low-sodium chicken broth
  • 5g salt (plus more to taste)
  • 42g unsalted butter, cubed
  • 5g fresh thyme, chopped
  • Black pepper, to taste

Instructions

  1. Bring chicken broth and salt to a boil in a wide pot.
  2. Add cauliflower florets, reduce heat, cover, and steam for about 20 minutes until fork-tender.
  3. Transfer steamed cauliflower to a food processor using a slotted spoon.
  4. In the same pot, whisk cubed butter with three tablespoons of hot broth until smooth.
  5. Pour the butter mixture over the cauliflower in the food processor along with thyme and black pepper; blend until completely smooth.
  6. Adjust consistency with warm broth if desired. Serve warm.
