  • 1/2 cup cubed feta cheese (or a dairy-free alternative)
  • 1/4 cup extra virgin olive oil
  • 1/8 cup apple cider vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • 1 tsp dried oregano
  • 1 tsp Dijon mustard
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine the romaine lettuce, red onion, tomatoes, cucumber, bell pepper, olives, and feta cheese.
  2. In a small mixing bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, honey, oregano, Dijon mustard, salt, and pepper until well combined.
