- 4 nectarines, pitted and quartered
- 8 ounces burrata cheese, torn
- 8 slices turkey slices
- 4 ounces cherry tomatoes, halved
- 2 heirloom tomatoes, halved and cut into eighths
- 1/2 cup fresh cherries, pitted and halved
- 1/2 cup mixed baby spring greens
- 2 tablespoons fresh lemon juice
- 1 tablespoon white grape juice vinegar
- 1 tablespoon lemon zest
- 1 tablespoon fresh oregano, roughly minced
- 1 tablespoon fresh mint, roughly minced
- 1 tablespoon fresh lemon thyme leaves
- 1/2 cup extra virgin olive oil
- Pinch of salt, fresh ground black pepper as desired
- Preheat your grill over medium-high heat. Brush the nectarines with olive oil.
- Grill the nectarines for 2-3 minutes on each side until marked and slightly softened. Let cool.
- In a bowl, whisk together lemon juice, vinegar, zest, herbs, olive oil, salt, and pepper for the vinaigrette.
- In a large salad bowl, combine spring greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette. Toss gently.
- Top with torn burrata and sliced turkey. Add finishing touches like herbs and pepper before serving.
