  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices turkey slices
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white grape juice vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Pinch of salt, fresh ground black pepper as desired

Instructions

  1. Preheat your grill over medium-high heat. Brush the nectarines with olive oil.
  2. Grill the nectarines for 2-3 minutes on each side until marked and slightly softened. Let cool.
  3. In a bowl, whisk together lemon juice, vinegar, zest, herbs, olive oil, salt, and pepper for the vinaigrette.
  4. In a large salad bowl, combine spring greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette. Toss gently.
  5. Top with torn burrata and sliced turkey. Add finishing touches like herbs and pepper before serving.
