- 1 lb ground turkey
- 2 medium sweet potatoes
- 2 small zucchini
- 2/3 cup shredded parmesan cheese
- 1 1/2 tsp garlic powder
- 1 tsp rosemary
- 5 tbsp olive oil
- Salt & pepper
- Preheat the oven to 400°F (200°C).
- Peel and chop sweet potatoes into bite-sized pieces. Toss with 2 tbsp olive oil, garlic powder, rosemary, salt, and pepper in a baking dish.
- Bake sweet potatoes for about 30 minutes until tender.
- In a pan over medium heat, brown the ground turkey with remaining olive oil and seasonings until cooked through.
- Slice zucchini and add it to the turkey mixture.
- Once sweet potatoes are done, combine with turkey and zucchini in the baking dish.
- Bake for an additional 10 minutes.
- Drizzle with remaining olive oil, top with parmesan cheese, and bake until cheese is melted (about another 10 minutes).
- Let cool slightly before serving.
