  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar (for sprinkling)
  • Mini chocolate chips or black decorating gel (for eyes)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until thickened, about five minutes. Let it cool.
  3. Roll out the pie crusts and cut out ghost shapes using a cookie cutter.
  4. Place half the shapes on a lined baking sheet, spoon blueberry filling onto each, and cover with remaining shapes. Seal edges by crimping with a fork.
  5. Brush tops with beaten egg and sprinkle with coarse sugar. Add mini chocolate chip eyes.
  6. Bake for 18-20 minutes until golden brown. Allow cooling slightly before serving.
