  • 4 large russet potatoes (washed and patted dry)
  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F and prepare a baking sheet.
  2. To slice the potatoes, place one between two chopsticks or skewers to prevent cutting all the way through. Cut vertical slits about ⅛ inch apart.
  3. Arrange the sliced potatoes on the baking sheet and brush half of the melted butter over them.
  4. Season generously with kosher salt and pepper.
  5. Bake for 30 minutes until softened, gently pulling apart the layers with a knife.
  6. Brush on the remaining butter and bake for an additional 30-35 minutes until crispy.
  7. Serve warm, adding extra salt and pepper as desired.
