- 4 large russet potatoes (washed and patted dry)
- 4 tablespoons unsalted butter (melted, divided)
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- Preheat your oven to 425°F and prepare a baking sheet.
- To slice the potatoes, place one between two chopsticks or skewers to prevent cutting all the way through. Cut vertical slits about ⅛ inch apart.
- Arrange the sliced potatoes on the baking sheet and brush half of the melted butter over them.
- Season generously with kosher salt and pepper.
- Bake for 30 minutes until softened, gently pulling apart the layers with a knife.
- Brush on the remaining butter and bake for an additional 30-35 minutes until crispy.
- Serve warm, adding extra salt and pepper as desired.
