  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 can (20 oz) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix chicken with soy sauce, olive oil, honey, garlic, ginger, paprika, salt, and pepper. Marinate for 10–15 minutes.
  3. Spread bell peppers, onion wedges, and pineapple on a sheet pan.
  4. Place marinated chicken on top and pour any remaining marinade over.
  5. Bake for 25–30 minutes until chicken reaches 165°F (74°C), stirring halfway through.
  6. Let rest for a few minutes before serving warm.
