  • 1 can mild green chiles (or 2 seeded and diced jalapenos)
  • 4 cups low sodium chicken broth
  • 2 (15 ounce) cans chickpeas, rinsed and drained
  • 1 ½ pounds boneless skinless chicken thighs (or chicken breast)
  • ½ cup frozen corn
  • Juice of 1 medium lime
  • Fresh cilantro for garnish

Instructions

  1. In a large Dutch oven over medium-high heat, sauté chopped onion and green chiles in olive oil until softened.
  2. Add ground cumin, chili powder, coriander, and oregano; stir for about 30 seconds before adding chicken broth.
  3. Incorporate one can of chickpeas and uncooked chicken; season with salt and pepper. Simmer on medium-low for 20-30 minutes.
  4. Remove chicken, shred it using two forks, then return to pot along with lime juice and chopped cilantro.
  5. Blend remaining chickpeas with half a cup of water until smooth; stir back into the pot to thicken the chili.
  6. Finally, add frozen corn and cook on low heat for another 5-10 minutes before serving.
