  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt (for topping)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix together the flour, granulated sugar, and salt for the crust. Cut in the cold butter until crumbly. Press into the prepared pan and bake for about 15–18 minutes until lightly golden.
  3. In another bowl, combine peach slices with granulated sugar, flour, lemon juice, and vanilla extract. Let sit to meld flavors.
  4. For the crumb topping, mix flour, both sugars, cinnamon, and salt in a bowl. Stir in melted butter until crumbly.
  5. Spread peach mixture over the cooled crust and sprinkle crumb topping evenly on top.
