  • 800g lean ground beef (or turkey/chickpeas)
  • 20g butter (or olive oil)
  • 1 tbsp minced garlic
  • 100g chopped white onion
  • 225g mixed bell peppers (red, green, yellow)
  • Salt, pepper, paprika & chili flakes to taste
  • 140g light cream cheese
  • 50g shredded mozzarella
  • 34 slices of light cheese
  • 240g dry macaroni
  • Fresh parsley for garnish

Instructions

  1. Cook the macaroni in salted water until al dente. Reserve 125ml pasta water before draining.
  2. In a large skillet over medium heat, melt butter (or oil), then sauté garlic, onion, and bell peppers for about 4–5 minutes.
  3. Add ground beef (or turkey/chickpeas) to the skillet, cook for 5–7 minutes until browned. Season with salt, pepper, paprika, and chili flakes.
  4. Reduce heat to low; stir in cream cheese, mozzarella, and cheese slices until melted and creamy.
  5. Combine cooked pasta with the mixture and add reserved pasta water as needed to achieve desired creaminess.
