  • 2 cloves garlic, crushed
  • 1/4 cup chopped sun-dried tomatoes (not in oil)
  • 1 cup low-sodium chicken broth
  • 1/2 teaspoon chili crunch oil or a pinch of red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup blended cottage cheese (any fat content)
  • 3 tablespoons chopped fresh basil

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Sauté shallots and garlic in olive oil until fragrant.
  3. Sear chicken in the skillet for 2–3 minutes per side, adding onion powder and Italian seasoning.
  4. Transfer seared chicken to the slow cooker and add sun-dried tomatoes and chicken broth.
  5. Slow cook on LOW for 4–6 hours until the chicken reaches an internal temperature of 165°F.
  6. Stir in cornstarch mixed with water to thicken the sauce about 30 minutes before cooking ends.
  7. Add Parmesan and blended cottage cheese, stirring until smooth.
