  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans
  • 1 can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat your oven to 375°F. Lightly spray two baking sheets.
  2. Arrange three tortillas on each baking sheet and bake for about 3-5 minutes until slightly crisped. Flip and bake for an additional 2-5 minutes until golden brown.
  3. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
  4. Stir in taco seasoning and water; bring to a boil then simmer for about 10 minutes.
  5. Warm the refried beans in the microwave for 1-2 minutes and spread over one tortilla.
  6. Layer cooked beef over the beans, add another tortilla, and repeat for three layers.
  7. Top with enchilada sauce, cheeses, diced tomatoes, green onions, and olives.
  8. Bake assembled pizzas for an additional 5 minutes until melted.
