  • 1 lb boneless skinless chicken thighs
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 medium zucchini, sliced
  • 1/2 cup chopped bell pepper
  • 1/2 white onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 1 tbsp rice vinegar
  • 1/4 tsp red pepper flakes
  • 1 tbsp cornstarch

Instructions

  1. Season the chicken by mixing it with salt, pepper, garlic powder, and cornstarch until well-coated.
  2. In a bowl, whisk together honey, soy sauce, chicken broth, rice vinegar, sesame oil, red pepper flakes, and cornstarch to make the sauce.
  3. Heat vegetable oil and sesame oil in a large skillet over medium-high heat. Stir-fry zucchini, bell pepper, and onion until tender-crisp; remove from pan.
  4. Add more oil if needed and cook seasoned chicken until browned on both sides. Then add minced garlic and ginger for flavor.
  5. Pour in the sauce; bring to a boil and simmer until thickened.
  6. Return the vegetables to the skillet; toss everything together until heated through.
  7. Serve hot over rice or noodles.
