  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/3 cup honey
  • 1 cup uncooked long grain or jasmine rice
  • 2 cups chicken or vegetable broth
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil (if using), salt, and pepper. Form into meatballs.
  3. Sear meatballs in a skillet over medium heat for 2–3 minutes per side until browned.
  4. In a saucepan, mix honey, soy sauce, ketchup, water, and garlic; simmer until combined.
  5. Spread uncooked rice in the baking dish; layer bell peppers and peas on top. Add olive oil and pour in broth.
  6. Nestle meatballs into the mixture and drizzle with honey garlic sauce.
  7. Cover with foil and bake for 40 minutes; uncover and bake an additional 10–15 minutes until rice is cooked.
