  • 2 eggs

  • 1 cup hot coffee
  • 8 oz semisweet or bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Add the hot coffee and mix until smooth.
  5. Divide the batter between the prepared pans and bake for about 30–35 minutes or until a toothpick comes out clean. Let cool completely before removing from pans.
  6. For ganache: Heat heavy cream until just boiling; pour over chopped chocolate in a bowl. Let sit for 2 minutes before stirring in butter and vanilla until smooth.
  7. Once cakes are cool, frost with ganache as desired.
