  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon

  • 1 large egg
  • 0.5 cup unsalted butter (melted)
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line with parchment paper.
  2. In a mixing bowl, combine light brown sugar, kosher salt, vanilla extract, flour, cinnamon, nutmeg, baking powder, egg, melted butter, and grated carrots until just combined.
  3. In another bowl, beat softened cream cheese with egg yolk and granulated sugar until smooth.
  4. Pour half of the carrot cake batter into the prepared baking dish; dollop cream cheese mixture on top; add remaining batter.
  5. Use a knife to create swirls through both batters without overmixing.
  6. Bake for about 30 minutes or until a toothpick inserted comes out clean.
  7. Cool for 15 minutes before transferring to a wire rack; cut into squares when completely cooled.
